Breakfast Muesli

Need a quick and balanced breakfast? Well here you have it! Breakfast muesli – get your protein, carbs, fruit, and healthy fats all in one delicious bowl.

This a great breakfast that can be made in no time. Switch from the standard milk & cereal to muesli.

Ingredients

  • 1/4 cup cereal – I use the dorset cereals
  • 1/4 cup almond milk
  • 1/2 cup greek yogurt
  • 1 teaspoon chia seeds
  • 1/4 cup fruit of choice – I like to pick a berry or bananas - The one pictured is made with blackberries.

Stir above ingredients. Put in the fridge for approximately 10 minutes, allowing chia seeds to thicken mixture. Enjoy!

The dorset cereal I have is the super cranberry, cherry, and almond muesli. The ingredients are wheat, barley, and oat flakes, raisins, sunflower seeds, cranberries, cherry, almonds and it’s 50% fruits, nuts, and seeds.

Best way to time this breakfast is to prep right when you get up. Shower, get ready, then enjoy your breakfast. If you’re like me and you sometimes have your breakfast at work then simply prep you muesli in a tupperware container. It’ll be ready when you get to work.

This past weekend I actually enjoyed my muesli with coconut yogurt instead of greek. The coconut yogurt had a much thinner consistency and was a little sweeter than I usually like – I used the vanilla flavor. I think I’ll stick with the greek yogurt – I prefer the thick, sour cream like taste and texture. But it’s a great alternative for those that need to remain dairy free.

This Week’s Groceries

Here’s a look at this week’s groceries. With the busy weekend I kept the grocery list a little smaller and went with Trader Joe’s instead of my usual Whole Foods spot.

Protein – I also have some frozen shrimp on reserve in the fridge.

  • Greek yogurt
  • Egg whites
  • Chicken

Fruits/Vegetables

  • Broccoli
  • Cucumber
  • Asparagus (frozen)
  • Asian pear (fruit not pictured)
  • Kiwi

Carbohydrates

  • Sweet potato

Snacks

  • Turkey Jerky
  • Seaweed Snacks (wasabi flavored)
  • Edamame
  • Sparkling water (raspberry lime)
  • Dark Chocolate (70% Cocoa) – the darker the chocolate the more satisfying. I’ll have a sliver, usually at night, when my sweet tooth kicks in.

Prep was minimal this evening. I spent a little longer with the puppies than I had intended. They were just so freakin cute. I couldn’t leave.

We stopped at a local Brazilian restaurant on the way home. What’s better than a plate of meat by the pound? I can’t think of much. You’re looking at chicken, pork loin, salad greens, crab meat, carrot salad, and plantains. All for the bargain price of $7.88. So good!

Luckily I can make a quick salad for lunch in the AM with packaged tuna. Have a great week!
